Stone Fruit Jalapeno Relish

I have no idea where this came from but I glad I found it. I have made this with plums, apricots, peaches and if I didn't have to pit cherries by hand I would use those as well. The sweetness from the fruit, a fresh mild heat from the jalapenos, acid from the lemon juice along with the salt from a grilled piece of meat this makes a condiment for almost any piece of meat. Keep a little jar of this in the fridge and you won't be disappointed. Feel free to add a little cumin or smoked paprika for a nice twist.

Ingredients

2 large plums, seeded and diced
1 jalapeño, seeded and diced
Kosher salt

Instructions

Combine the plums and jalapeno in a small bowl along with a bit of Kosher salt.

Feel free to add ¼ teaspoon cumin or smoked paprika at this point for some additional flavor.
Cover and place in the refrigerator for about an hour.
