Smoked Beets

Beets are an ingredient that will make many people stop reading here. Though to me they are about as elemental of vegetable as you can get. They are earthy and unapologetic about their flavor. So many of us grew up on canned pickled beets and have never tried them again. Smoking them condenses that earthiness flavor in them and creates an almost jello consistency.

Ingredients

2 lbs. beets
olive oil

Instructions

Wash the beets to remove the dirt and remove any leaves.
Coat each beet with olive oil and wrap in aluminum foil.
Prepare a smoker with wood chips to a temperature of 250°.
Smoke the beets for around 2 hours and remove from the smoker and allow to cool.
Once cooled, remove the beets from the aluminum foil. Take a paper towel and rub the skin on the beet to remove.
