Roasted Sweet Potato Fries

Roasted sweet potatoes or even just the sweet potato can start debates that rival politocal debates. From personal experience my hate for them came from my family Thanksgiving where I was forced to eat the mush of canned yams topped with pineapple and marshmallows. Fortunately I was shown the light of simple sweet potato fry. A great compliment to any steak or just as a snack topped with Herb Creme Fraiche. If you have always snubbed your nose to the potato's cousin, I encourage to dive in with an open mind. You won't be disappointed.

Ingredients

3 large sweet potatoes
2 Tbsp. olive oil
1 tsp. Kosher salt
1 tsp. smoked paprika
1 tsp. garlic powder

Instructions

Preheat oven to 400°.
Peel and cut sweet potatoes into ½" x 3" strips and then toss them in the olive oil.
In a small bowl, mix the spices together and then toss them with the sweet potatoes.
Spread sweet potatoes out evenly onto a baking sheet.
Bake until crisp on the bottom, about 15 minutes, then flip and cook for another 10 minutes.
Serve hot, adding a bit of Kosher salt if needed.
