Green Goddess Dressing

We are a household that tries to eat some type of salad with dinner. I’ll be the first to admit that a good bag salad is often a star in our house. This helps with my fear of becoming a household with an endless amount of salad dressings, all with crusty lids. Making salad dressings in small portions helps with freshness. Green Goddess is a southern dressing that is rich with herbs and can be made healthier by simply switching out some ingredients.

Ingredients

2 anchovy filets
½ cup Duke's mayonaise
cup whole milk plain Greek yogurt
½ cup Italian flat leaf parsley
1 Tbsp. fresh lemon juice
2 Tbsp. tarragon
3 Tbsp. chives
2 garlic cloves, minced

Instructions

Add all of the ingredients into a food processor or blender and process until smooth and uniformly green. Adjust the seasoning with salt, pepper and lemon as needed.
