Four Ingredient Spaghetti Sauce
Wednesday, July 1, 2020
I love my wife but when she buys a store bought spaghetti sauce it just disappoints me. While some of them have gotten better, most of them are filled with sugar and an ingredient list that's way too long for something that should be so simple. Four ingredients to make a great base. Feel free to add an extra herb.
Ingredients
Sauce
6 roma tomatoes
1 large yellow onion
2 garlic cloves
10 basil leaves, fresh
2 Tbsp. olive oil
Kosher salt
Garnish
Parmesan cheese
fresh basil, chopped
Instructions
Preheat oven to 400°.
Cut the roma tomatoes and onion into quarters and place in a bowl along with the garlic and basil leaves.
Drizzle the olive oil and sprinkle salt into the bowl and then mix.
Place all of the ingredients on a cookie sheet and roast in the oven for about 20 minutes, turning everything halfway through.
Remove from the oven and place everything, except for two of the tomatoes, into a blender. Blend until smooth.
Rough chop the withheld tomatoes and place everything into a sauce pan.
Simmer the sauce on medium heat for about 20 minutes to allow everything to condense.
Season with salt and pepper. Depending on your tomatoes you may need to add a little sugar, a little goes a long way.
Add your drained pasta to the saucepan and stir in. At this point, feel free to add some parmigiano reggiano or some more fresh chopped basil.
