Classic Hummus

People think that it's chickpeas that give hummus its flavor. Though it's actually Tahini that gives hummus its nutty flavor and cumin for earthiness. You can't go wrong with serving this with some good olive oil along with some toasted sesame seeds or even a good crank of fresh black pepper. Once you've got the base recipe down, riff on it to change things up every once in a while. If you are worried about having leftover Tahini, slice up apples and dip away.
Ingredients
1 15oz can of chickpeas, rinsed and drained
1 garlic clove
½ cup tahini, mixed well
¼ cup fresh lemon juice
¾ tsp. Kosher salt
¼ tsp. ground cumin
2 Tbsp. olive oil
Instructions
Finely grate the garlic.
In a blender, add the chickpeas, lemon juice, garlic, Tahini, salt, along with 3 Tbsp of water. Blend until smooth, approx. 1 minute.

With the blender still running, drizzle the olive oil into the hummus. Taste and season with salt if needed.
Transfer hummus to a shallow bowl, top with za’atar and/or sesame seeds, and drizzle with more oil.
