Chocolate Energy Snacks

The afternoon sweet is where we always fail when it comes to eating healthier. Hummus is great for a snack in the morning but that 3:30 pick me up is just hard. Yogurt is great for a week. These little pops of chocolate are perfect and they clock in at 100-ish calories. Just like Overnight Oats, feel free to play with the add-ins and it's easy to make a large batch and stick them in a container so you can quickly grab a couple for the afternoon. We've tried chia seeds, sesame seeds, different chopped nuts or add a bit of flake salt. It's all about finding balance with the ingredients.
Ingredients
1¼ cups steel-cut oats
1 Tbsp. chia seeds
1 Tbsp. unsalted sunflower seeds
½ cup peanut butter, creamy
⅓ cup honey
1 tsp. pure vanilla extract
¼ tsp. Kosher salt
½ cup chocolate chips
½ cup unsweetened cocoa powder
Instructions
In a medium size bowl, combine all of the ingredients, minus the cocoa.
Using a cookie or ice cream scoop, portion balls into 1" diameter.
Using your hands, round the balls and place on a sheetpan lined with parchment paper.
Place the sheet pan in the refrigerator and chill the balls for 30 minutes.
Put the cocoa on the flat plate. Remove the sheetpan from the refrigerator. Roll each ball in the cocoa to create a light coating on the outside.
Store the chocolate energy balls in an air tight container.
