If you've got a dog in the fight or not, the Superbowl brings everyone together. From fan that knows all the stats to the one that's still learning the game between plays or watching the halftime show performance, you're gonna be eating during the Super Bowl. We've hosted many Superbowl parties and the easiest one was when we decided to elimate the need for everyone to bring random dishes and just made a spread of tacos. Follow along, add a keg of beer and you will have success.

Sisig Street Tacos

Sisig is a classic Phillipino dish that is typically made with pig's head and in the case of Andrew Zimmerman's recipe it uses pork belly. The secret is using a fatty piece of pork. It's the fat that is chopped into slow roasted pork that gives it its rich flavor. After a hit in a hot cast-iron skillet, to create crispy bits, you combine it with herbs, an acid kick from the apple cider vinegar to create an amazing base for a taco or bowl. Our recipe uses pork shoulder to help increase the amount of filling that you will need for all of your hungry fans.

Taco Accompiants

If you are going to make street tacos then you need to have all the things.

Flour tortillas, warmed
You can easily keep your tortillas warm by wrapping them in a hand towel, or get fancy with a tortilla warmer
Corn tortillas, warmed
Fresh jalapenos
Corta cheese, crumbled
Radishes, thinly sliced
Pickled onions
Cilantro, chopped
White onion, diced
Cauliflower rice
Black beans
Salsa roja
Salsa Verde

Queso Fundido

Seriously what would a football party be without some type of queso. We've dubbed Queso Fundido the adult queso. We switched out the Velvetta block for some amazing Mexican cheeses. Added chorizo and threw down some fire roasted pablano peppers. It's cheesy, chunky and well just better. It only takes about 5 minutes to make, can be made ahead time and then just thrown under the broiler at the last minute which means more beer time. By our back of the napkin math, that's a win we will take all day long.
