Salsa Verde

We like this version of salsa verde because it uses all the ingredients raw. Not only is easier it gives the salsa a cleaner taste. While street tacos are an obvious use for this one topping jammy eggs with it is also a great option.
Ingredients
3 lbs. tomatillos, husked
1 serrano chile
¼ white onion
1 bunch fresh cilantro leaves, chopped
1 Tbsp. honey
1 tsp. Kosher salt
Instructions
Wrap the onion in a paper towel and squeeze any excess onion juice.
Add all the ingredients, including the onion in a blender and blend until smooth. About 4 minutes.
Season with salt to taste.
