Ham Salad

Ham salad is great snack that can use up all of your leftover ham from Easter, Thanksgiving or any holiday. You want your ham salad to be on the drier side, so I tend to add the mayonaise a tablespoon at a time to help control this. Serve on your favorite cracker as a snack or on two slices of toasted bread with some crisp lettuce.
Ingredients
2 cups ham, skinned removed
2 stalks celery, finely chopped
¼ cup yellow onion, finely diced
2 hard boiled eggs, diced
¼ cup hot dog relish
½ cup Duke's mayonaise
Freshly ground black pepper
Instructions
Run the ham through a meat grinder, using a medium setting. If you don't have a meat grinder use a food processor to get a fine dice on the ham.
In a medium bowl, combine the ground ham, celery, yellow onion, hard boiled eggs and hot dog relish.
Starting with a ¼ cup add the mayonaise and combine.
Continue to add the remaining mayonaise until you get the consistancy you are wanting.
Season with a good amount of fresh ground pepper.
